This half term, I decided I wanted to try a different kind of baking with Sophie. We always make muffins, cakes, shortbread and so on, so I thought we’d try making bread. Now, most breads take what would seem, to a toddler, like an age and a half to make. So we made soda bread. And I have to say, it was the easiest thing to do, we probably have the ingredients for it in our house 90% of the time, we got a good 15 minutes entertainment watching it grow as it baked, and it tasted pretty good.
Buttermilk is needed for this recipe, but if you don’t have it, you can make your own by adding a tablespoon of fresh lemon juice to whole milk, and letting it rest for 5-10 minutes until it curdles.
Simple soda bread
This makes a dense and tasty loaf which would be excellent served with thick soup, or just with lots of butter. Children can help with the weighing, mixing, kneading, and shaping.
- 165g self-raising wholemeal flour
- 165g plain white flour
- 1/2 tsp salt
- 1/2 tsp bicarbonate of soda
- 284ml carton buttermilk
- Preheat the oven to 180C (fan).
- Mix together the flours, salt and bicarbonate of soda in a large bowl. Make a well in the centre, tip in the buttermilk, and mix with a fork to form a soft dough. It should not be sticky or dry – add a little extra flour or a little milk if needed.
- Turn out on the counter and knead briefly until it forms a bound-together dough.
- Shape into a round, flatten slightly, and cut a shallow cross in the top.
- Transfer to a floured baking tray. Bake for 30 minutes. The readiness test is that it should sound hollow when you tap the bottom.
- Cool on a wire rack.
