Baking with my babies: banana flapjacks

Flapjacks are awesomely easy to make with children and a wonderful way to get energy into them. We often make plain ones (basically 250g oats, 125g butter, 125g brown sugar, 3 tbsp golden syrup and bake), but this recipe is for banana ones, because I had two over-ripe bananas in the fruit bowl and my children don’t like banana smoothies (I know!).

Banana flapjacks

  • Servings: makes 16 squares

Options: add chocolate chips, cocoa powder, raisins, seeds – whatever takes your fancy!

Ingredients

  • 40g butter
  • 60g light brown soft sugar
  • 2 tbsp golden syrup
  • 225g oats
  • 2 ripe bananas

Method

  1. Preheat oven to 200C.
  2. Melt the butter, sugar and golden syrup together in a large saucepan over a low heat.
  3. Mash the bananas and mix into the butter mixture.
  4. Tip the oats into the pan and stir until everything is thoroughly mixed. Add any extras at this stage too.
  5. Grease a 20cm square tin and press the mixture firmly into the tin, not forgetting the corners. Flatten with a spoon (or if your tin is deep, use a flat-bottomed glass or mug).
  6. Bake for 15-20 minutes until lightly golden and the edges are starting to brown.
  7. Cut into 16 squares while it is still hot, then let cool in the tin.
